Balnaves of Coonawarra Sparkling Cabernet is selected from fruit that shows complex character and elegant structure. It is drawn from the estate vineyard at the southern end of the Coonawarra terra rossa strip.

A blend of many different vintages, the wine ages in a seasoned French oak solera system. It is then tiraged (with sugar and yeast) for secondary fermentation. The wine is disgorged and a small amount of vintage fortified added.

Garnet red, Balnaves of Coonawarra Sparkling Cabernet is rich and complex with bright berry flavours. It begins sweet and round, but finishes balanced and dry.

Though ready to drink on release, it can be cellared for four years.
