Mitolo Savitar Shiraz is the leading Mitolo Shiraz, sourced from the Chinese Block of the Lopresti family's vineyards at the southern end of McLaren Vale.
The grapes come from an unforgiving, rocky patch of soil in the north-eastern corner of the block. Here the vines are naturally pushed hard, producing low yields of fruit. The berries, though tiny, are packed full of flavour.
Each parcel of fruit is delicately handpicked, then fermented on skins for 10 days. Time on skins contributes to the wine's overall structure and builds a framework for ageing.
Following fermentation the wine is pressed and transferred to medium to light toast French oak barrels, 100 per cent new. It remains on light lees for 16 months before select barrels are chosen for the final blend.
Deep bright red, Mitolo Savitar Shiraz is as bold and powerful as the dragon like creature after which it is named.
Full bodied, it is saturated with black fruits, yet delicately balanced with natural acidity, savoury complexity and structural tannins. Cellaring potential is 20 years.
