Hentley Farm von Kasper Cabernet Sauvignon is named in honour of Otto Kasper, who planted the vines on a perfectly positioned site on the western banks of Greenock Creek in the Barossa Valley.
The vineyard lies flat, the air is cool, the soils are deep and the vines are protected from the afternoon sun. Cabernet thrives in these conditions, producing premium fruit.
The grapes are destemmed and fermented with 2-3 pump overs daily, ensuring the wine achieves full tannin structure. After one week on skins, the wine is pressed to one third new French oak barrels for natural malolactic fermentation.
The wine is racked off lees and returned to barrel to mature for a total of 20 months. There is no fining or filtration.
Deep garnet, Hentley Farm von Kasper Cabernet Sauvignon has intense herbaceous fruit flavours, refined tannins and great length. Cellaring potential is 20 years.
