White Label Shiraz

Petaluma White Label Shiraz is the winery's younger sibling Shiraz. Though it was originally grown in the Adelaide Hills, from the 2019 vintage it is grown in Coonawarra.
The fruit is destemmed, crushed and cold soaked, then inoculated with yeast. The juice ferments in headed down fermenters, where the grape skins are kept submerged. It receives daily rack and returns to gently extract colour, tannin and flavour.
At sugar dryness the wine is pumped away and the skins pressed. After settling in tank, it is transferred to French oak barrels for malolactic fermentation. Once complete the wine is sulphured and returned to barrel.
Maturation lasts for around 18 months. The wine is given light egg white fining to help clarify it and soften the tannins before bottling.
Crimson in colour, Petaluma White Label Shiraz is bright with berry flavours, spice and soft, sandy tannins. Cellaring potential is 10 years.
