Taylors Jaraman Shiraz blends select parcels of grapes from the Clare Valley and McLaren Vale, South Australian regions renowned for their distinctive Shiraz.
The grapes are destemmed into small static stainless steel fermenters. Half are cold soaked to enhance the fruit flavours in the final wine. Fermentation then occurs at a constant warm temperature using a Shiraz specific yeast isolate.
The wine is gently pressed to American oak barrels for malolactic fermentation, followed by an average of 12 months of maturation.
Deep cerise red, Taylors Jaraman Shiraz is luscious with ripe red berry flavours, well integrated tannins and persistent length. Cellaring potential is eight years.
