Chardonnay

De Salis Wines Chardonnay is sourced from high altitude, cool climate estate vineyards. They are situated on the northern slopes of Mount Canobolas in Orange.

The grapes are handpicked over several passes of the vineyard, then whole bunch pressed. After a period of settling, the juice is fermented with natural yeasts in new and seasoned French oak barrels. Natural malolactic fermentation and maturation follows.

Deep straw, De Salis Wines Chardonnay offers ripe stone fruit and pithy citrus flavours with textural nutty hints. Cellaring potential is eight years.
