Chapel Hill House Block Shiraz is drawn from Chapel Hill's oldest vines: the House Block, planted in 1977. Cooling sea breezes from Gulf St. Vincent allow for full flavour development.

The handpicked grapes are gently crushed and open fermented. The ferment is regularly hand plunged to extract subtle tannins.

After two weeks on skins the wine is basket pressed, and the free run and pressings are combined. Around 20 months of maturation in tight grained French oak follows. There is no fining or filtration.

Once bottled the wine ages for a further six months prior to release.

Deep crimson, Chapel Hill House Block Shiraz is medium bodied, distinctly perfumed and texture driven with savoury notes and fine, dusty tannins. Cellaring potential is 12 years.
