A.S.W. Cabernet Sauvignon Shiraz

Howard Park A.S.W. Cabernet Sauvignon Shiraz is drawn from the best blocks of Howard Park's premier Leston Vineyard at Wilyabrup. It honours co-owner Amy Burch's parents, who share the initials A.S.W.

This wine is a stylistic departure for Howard Park, using only Margaret River fruit rather than adding grapes from Great Southern. The blend is typically 60% Cabernet Sauvignon and 40% Shiraz.

The Cabernet is fermented in static fermenters with stainless steel heading down to keep the skins submerged. The Shiraz is open fermented with daily plunging.

Both parcels mature separately in French oak for 18 months. After blending, the wine spends a further two months in American oak.

Deep red, Howard Park A.S.W. Cabernet Sauvignon Shiraz has powerful berry and plum flavours, silky tannins and dense, fine grained oak delivering texture. Cellaring potential is 15 years.
