Deep Woods Estate Cabernet Sauvignon Merlot is mainly sourced from three blocks on the estate vineyard at Yallingup. A small amount of fruit is from the neighbouring Abbey Vale property.
The wine is a blend of 75% Cabernet Sauvignon, 20% Merlot and 5% Petit Verdot or Malbec, depending on vintage. The individual vineyard parcels are fermented separately using a variety of techniques.
After fermentation the wine is racked to tight grained French oak barrels, one third new. It matures for 18 months in barrel prior to blending, bottling and release.
Purple crimson, Deep Woods Estate Cabernet Sauvignon Merlot has layers of red fruit and subtle sweet oak. Ripe tannin abounds, delivering structure and length. Cellaring potential is seven years.
