Xanadu DJL Cabernet Sauvignon is sourced from two grower vineyards in northern Margaret River. DJL refers to Dr John Lagan who first planted the vineyards at Xanadu in 1977.
It typically comprises 85% Cabernet Sauvignon, 10% Malbec and 5% Petit Verdot. The fruit is crushed and destemmed, then fermented in static fermenters for 5-7 days. A significant portion is left for extended maceration on skins.
The various batches undergo malolactic fermentation in a combination of tank and barrel, then mature for 14 months in new and seasoned French oak barriques.
Deep red, Xanadu DJL Cabernet Sauvignon is full bodied with fresh fruit flavours and ripe tannins fusing in a persistent finish. Cellaring potential is seven years.
