Wine
Vasse Felix Tom Cullity is the pinnacle of Vasse Felix's winemaking. It honours Dr Thomas Brendan Cullity, who in 1967 pioneered the Margaret River wine region and its founding wine estate, Vasse Felix.
Among Dr Tom Cullity's first plantings were Cabernet Sauvignon and Malbec. The Tom Cullity descends from these original vines, typically comprising 75% Cabernet Sauvignon, 20% Malbec and 5% Petit Verdot.
The fruit is destemmed without crushing. Most is static fermented, gently pumped over and left on skins for up to 30 days. The Petit Verdot and small parcels of Cabernet and Malbec are open fermented. Only natural yeasts are used.
The wine is basket pressed to fine French oak, both new and seasoned, for 18 months of maturation.
Ruby purple, Vasse Felix Tom Cullity is a softer style of Cabernet, medium bodied and plush. Rich fruit builds into a long, fine, powdery tannin structure with earthy power and spice.
It is the culmination of many years of innovation and refinement. An outstanding Margaret River Cabernet. Cellaring potential is 20 years.
