Two Hands Wines Dave's Block McLaren Vale Shiraz is drawn from a single block of old vines perched on an elevated site at Blewitt Springs, McLaren Vale. The cooler climate allows the grapes to mature slowly.
Just one small parcel of fruit from this block is crushed, destemmed and open fermented. After two weeks on skins, the free run and pressed juice are blended and settled for 24 hours.
The wine is racked to 1-4 year old French oak barrels, where it sees malolactic fermentation and is aged for 20 months. It is bottled with minimal fining and no filtration.
Dark red purple, Two Hands Wines Dave's Block McLaren Vale Shiraz is full bodied with lifted spicy aromatics and persistent, textured tannins. Cellaring potential is 15 years.
