Chardonnay

Yarra Yering Chardonnay is made from two blocks of some of the oldest Chardonnay vines in Australia. These unirrigated vines were planted by Dr Bailey Carrodus on their own roots in 1969.
The grapes are handpicked in two parcels in the early morning while still cold. One parcel is whole bunch pressed using a basket press, the other is foot stomped without destemming. Fermentation occurs using indigenous yeast.
Acid softening malolactic fermentation takes place in barrel. The wine matures on full lees in new and seasoned French oak for 11 months with occasional stirring to build complexity. It is bottled via gravity without filtration.
Bright yellow, Yarra Yering Chardonnay is rich and textured with its acidity driving the taste. Highly individual in style, it reflects its single vineyard origin. Cellaring potential is eight years.
