Paladin Hill Shiraz

Wills Domain Paladin Hill Shiraz is made with the best handpicked parcels of estate fruit each year. The vines grown on an elevated site of red gravel soils.

The grapes are gently destemmed but kept as whole berries. They are cool fermented at 22°C to retain freshness and allow gentle extraction of tannin and flavour.

After 10 days on skins with pump overs twice a day, the wine is gently separated from the skins. It completes fermentation and is matured in French oak barriques.

Rich purple, Wills Domain Paladin Shiraz balances crunchy red fruit flavours with darker, toastier notes from the oak. Cellaring potential is 10 years.
