Paladin Hill Chardonnay

Wills Domain Paladin Hill Chardonnay is made with the best parcels of estate fruit each year. The Chardonnay grapes are handpicked in the cool of the morning.

After being chilled overnight in the cool room, the fruit is whole bunch pressed directly to barrel. Fermentation is with natural yeasts with the temperature kept at 20°C.

Once the ferment is complete, the barrels are sulphured to prevent malolactic fermentation. The wine matures in oak at 10°C, receiving occasional stirring before it is prepared for bottling.

Straw green, Wills Domain Paladin Hill Chardonnay is a soft wine with rich stone fruit flavours and a long, zesty acidity. Cellaring potential is five years.
