McHenry Hohnen Hazel's Vineyard Cabernet Sauvignon is grown in the winery's Hazel's Vineyard on a tributary of the Chapman Brook in southern Margaret River.
The vineyard is certified biodynamic. It is located on a north facing aspect in ironstone gravel loams, seeing plenty of sunshine and cooling Southern Ocean influences.
The fruit undergoes fermentation in a stone fermenter, partially with wild yeasts and a percentage of whole bunch inclusion. The juice is hand plunged and spends several weeks on skins before basket pressing.
The wine is matured for 14 months in fine grained French oak, both new and seasoned. It is then bottled unfined and unfiltered with minimal preservatives.
Deep red, McHenry Hohnen Hazel's Vineyard Cabernet Sauvignon is full bodied with fleshy fruit flavours. Firm but fine tannins provide length. Cellaring potential is 10 years.
