Fontaine Cabernet Sauvignon

Dominique Portet Fontaine Cabernet Sauvignon is drawn from several warmer vineyards at the northern and southern ends of the Yarra Valley. These sites produce juicy, concentrated fruit.

Though predominantly Cabernet Sauvignon, the wine also includes small amounts of Merlot, Cabernet Franc, Petit Verdot and a dash of Malbec.

The grapes are mechanically sorted, destemmed and gently crushed. The juice spends two weeks on skins and is fermented at cool temperatures. The wine matures for 10 months in French oak barrels.

Bright garnet, Dominique Portet Fontaine Cabernet Sauvignon is medium bodied and gently sweet, with juicy fresh fruit flavours and silky tannins. Cellaring potential is 10 years.
