In 1973 Dr Bailey Carrodus produced the first vintage of Dry Red Wine No. 1. A Bordeaux style blend it is Cabernet Sauvignon with smaller amounts of Merlot, Malbec and Petit Verdot from the 1969 plantings.
The grapes are destemmed and partially crushed to half tonne open fermenters. These small fermenters enable experimentation with varying time on skins. All batches are hand plunged twice daily.
The components are kept separate for up to 18 months of maturation in French oak barriques, around 40% new. They are blended just prior to bottling.
Bright garnet, Yarra Yering Dry Red Wine No. 1 fuses power with poise, concentration with finesse. A Yarra Yering classic. Cellaring potential is 25+ years.
