Carrodus Cabernet Merlot

Yarra Yering Carrodus Cabernet Merlot is made from the original 1969 plantings. It is a small batch wine. Usually only a few barrels are made each year, when the conditions are right.
The wine is typically three quarters Cabernet Sauvignon and one quarter Merlot. The handpicked grapes are crushed and destemmed into open tea chest fermenters. The juice is hand plunged twice daily to complete fermentation.
Basket pressing delivers gentle tannin extraction. The wine undergoes malolactic fermentation in new French oak Bordeaux barrels and matures for 20 months. Bottling is via gravity without filtration.
Dense purple red, Yarra Yering Carrodus Cabernet Merlot is a big wine, beautifully balanced with fruity tannins, and great length. Cellaring potential is 20 years.
