Tamar Ridge Reserve Pinot Noir is made only in select years to showcase the best of Tamar Valley Pinot Noir. Each block of fruit is harvested separately as it reaches ripeness.
Most of the fruit is destemmed into small open stainless steel fermenters for cold soaking. Natural yeasts begin the ferment. A smaller component is whole bunch fermented with wild yeasts, receiving foot treading.
Post ferment, the wine is basket pressed from the skins and settled for 24 hours. It is then run to new and seasoned French oak barrels for maturation.
In the spring, the barrels warm up and go through malolactic fermentation. After 10 months in oak, each parcel is sampled and the best are identified for the final blend.
Deep crimson, Tamar Ridge Reserve Pinot Noir has red berry flavours, soft tannins and acidity giving definition to the long finish. Cellaring potential is eight years.
