Tahbilk Cabernet Sauvignon draws from estate vines planted as early as 1949 at Nagambie Lakes, central Victoria. The variety excels in the ferric oxide loam soils and temperate climate.
Tahbilk takes a traditional approach to winemaking, aiming to produce varietally expressive wine. The fruit is fermented in the winery's original open oak vats, which date back to the 1860s.
The wine is aged for 18 months in large and small seasoned oak barrels, predominantly French. It is blended and filtered prior to bottling.
Bright garnet, Tahbilk Cabernet Sauvignon has a core of dark fruit flavours nuanced with savoury spice. Fine, ripe tannins lend support. Cellaring potential is 15 years.
