Wine
Oakdene William Shiraz is grown at Wallington on the Bellarine Peninsula, where the cool maritime climate lengthens the ripening season and produces low yields of high quality fruit.
Most of the grapes are destemmed, with around 20% included as whole bunches. Fermentation occurs with wild yeasts in small open vats.
After extended post ferment maceration, the wine is pressed to a mix of new and seasoned French oak barrels. Here it undergoes malolactic fermentation and 16 months of maturation prior to bottling.
Deep red purple, Oakdene William Shiraz is medium bodied with spicy dark fruit flavours, firm tannins and a long, savoury finish. Cellaring potential is 10 years.
