Ashton Hills Reserve Pinot Noir is the pinnacle of Ashton Hills winemaking. The fruit is handpicked from five different Pinot Noir clones grown at the winery's Piccadilly Valley vineyard.
The grapes are destemmed for fermentation using a small destemmer that keeps the whole berries intact. A small portion of whole bunches are included in the fermentation, the proportion varying according to the vintage.
After fermentation the wine is basket pressed and matured in French oak. All barrels are kept on lees to build body and complexity. Only the best barrels are selected for the final blend.
Deep purple, Ashton Hills Reserve Pinot Noir has restrained elegance, ripe red fruit flavours and perfect balance.
An outstanding Pinot Noir. Cellaring potential is 12 years.
