Dominique Portet Brut Rosé is a méthode traditionnelle sparkling wine. Dominique Portet has been instrumental in promoting Australia's potential for making sparkling Rosé.
The fruit is sourced from two elevated vineyards in the Upper Yarra Valley. Their warm days, cool nights and little rainfall allow the fruit to ripen slowly, fostering the right flavour development.
Pinot Noir comprises two thirds of the blend; the remainder is Chardonnay with a small amount of Pinot Meunier. The grapes are handpicked and gently pressed for primary fermentation.
Secondary fermentation takes place in bottle. The wine ages on lees for two years in a cool, temperature controlled cellar before its yeast lees are removed and the wine topped up and released.
Pale salmon, Dominique Portet Brut Rosé is full flavoured with sweet red fruit flavours, layered texture and a lingering finish. Made for immediate enjoyment.
