Sauvignon Blanc

Scotchmans Hill Sauvignon Blanc is grown on Victoria's Bellarine Peninsula in soils of black vertosol, derived from basalt. The vines are the F4V6 Sauvignon Blanc clone.
The fruit is crushed, destemmed and pressed. Its juice is primarily sent to tank for cool fermentation, but a portion is transferred to seasoned French oak barriques for wild yeast fermentation.
The wine rests on lees for four months before it is stabilized, filtered and bottled.
Bright straw green, Scotchmans Hill Sauvignon Blanc has lively tropical fruit flavours and tangy acidity. Cellaring potential is one year.
