Papillon
Wine
Spinifex Papillon is a blend of Grenache and Cinsault sourced from a range of old Barossa Valley vineyards primarily comprised of dry grown bush vines.
Around half the Grenache is destemmed but not crushed, while the rest is kept as whole bunches; all the Cinsault ferments as destemmed whole berries. Both varieties are wild yeast fermented and aged in a mix of concrete, stainless steel and large oak.
Red purple, Spinifex Papillon is medium bodied with red fruit flavours, very fine tannins and a fresh, crunchy finish. Cellaring potential is five years.
