Cliff Edge Cabernet Merlot

Mount Langi Ghiran Cliff Edge Cabernet Merlot draws from blocks across the winery's historic vineyard in the Grampians, known for its cool climate, granite soils and old vines.

Around equal amounts of Cabernet Sauvignon and Merlot are destemmed but kept as whole berries. Fermentation takes place with natural yeasts in small open top vessels.

During fermentation, the juice receives plunging and pump overs. After an average of 2-3 weeks on skins, the wine is pressed to tank where it settles overnight before being transferred to barrel for malolactic fermentation and maturation.

The wine is prepared for bottling following 18 months in new and seasoned French oak.

Bright ruby, Mount Langi Ghiran Cliff Edge Cabernet Merlot has dark fruit flavours and spice supported by fine tannins and crunchy acidity. Cellaring potential is 10 years.
