De Salis Wines Lofty Cuvée is a sparkling blend of 50% Pinot Noir, 35% Chardonnay and 15% Pinot Meunier, all grown in the winery's Lofty Vineyard in Orange.

The fruit is whole bunch pressed, then after settling for 36 hours the juice is racked straight to seasoned French oak barriques. Here it ferments on pulp with natural yeasts and without added enzyme.

The wine then undergoes secondary fermentation in bottle and rests on yeast lees for over four years. A zero dosage wine, no sugar is added in preparation for release.

Pale gold, De Salis Wines Lofty Cuvée has rich berry flavours with a tight, lingering finish. Cellaring potential is eight years from release.
