Clairault Margaret River Cabernet Sauvignon draws from the Clairault and Ironstone Vineyards at Wilyabrup. Typically there is also a tiny amount of Cabernet Franc.

The fruit is gently destemmed and crushed so that each berry only just splits. This encourages fresh, clean flavours to develop.

Fermentation takes place slowly with a specifically selected yeast. The ferment is initially pumped over three times a day, lessening as the wine develops. After about two weeks it is pressed.

The wine matures in French oak barrels for 10 months before it is clarified and bottled.

Crimson red, Clairault Margaret River Cabernet Sauvignon has a red and black fruit core held together by tensile tannins. Cellaring potential is 10 years.
