Michael Hall Adelaide Hills Sauvignon Blanc is sourced from several Adelaide Hills vineyards, typically including the steep, high altitude Hill Block at Piccadilly.
The fruit is handpicked, pressed and fermented with wild yeasts in French oak puncheons. Around 5% of the juice is fermented on skins. After nine months maturing in barrel on lees, the wine is filtered and bottled.
Bright yellow, Michael Hall Adelaide Hills Sauvignon Blanc has fine, taut fruit flavours and gentle oak complexity. Cellaring potential is three years.
