Straws Lane Pinot Noir

Shadowfax Straws Lane Pinot Noir is grown on the north side of Mount Macedon, almost in the clouds at 800 metres above sea level. The vineyard is close planted on a granite outcrop.
After sorting and destemming, the grapes are placed as whole berries into small open fermenters. Natural fermentation occurs with daily hand pump overs and limited plunging, extracting fine tannins and flavour.
Following two weeks on skins the wine is pressed and racked to new and seasoned French oak hogsheads. It is blended and filtered prior to bottling.
Deep purple, Shadowfax Straws Lane Pinot Noir has cherry fruit flavours, lacy tannins and a keen acidic core. Cellaring potential is seven years.
