O'Leary Walker Wines Claire Reserve Shiraz is sourced from gnarled centenarian vines at Polish Hill River in the Clare Valley. Dry grown, the vines rely only on natural rainfall.
The wine is dedicated to Claire Marie O'Leary, the mother of winery co-founder David O'Leary.
The fruit is destemmed and fermented with natural yeast. It is hand plunged up to four times daily, which controls its temperature and maximizes flavour and tannin extraction. Post ferment, the wine remains on skins for two weeks.
After light pressing the wine is transferred to French oak, first to 100 per cent new oak for 12 months then to seasoned oak for 18 months further.
Deep crimson, O'Leary Walker Wines Claire Reserve Shiraz has juicy, rich fruit weight, long grainy tannins and complex oak. Cellaring potential is 15 years.
