Bernard's Cabernets
Wine
Oakdene Bernard's Cabernets is a blend of Merlot, Cabernet Franc and Cabernet Sauvignon, all hand harvested. The fruit is grown on the Bellarine Peninsula in Victoria.
The grapes are destemmed, crushed and cold soaked for five days. Fermentation takes place with wild yeasts in small open vats.
The wine remains on skins for seven days post ferment, then is pressed to a mix of new and seasoned French oak barrels. After malolactic fermentation and around 16 months of maturation, the wine is bottled.
Ruby red, Oakdene Bernard's Cabernets is medium bodied with juicy red and black fruit notes, firm tannins and a fresh acidity. Cellaring potential is 10 years.
