Juniper Estate The Tribute Cabernet Sauvignon represents an outstanding parcel of Cabernet Sauvignon. It is a tribute to winery co-founder Roger Hill.
The fruit is handpicked from a single, dry grown estate block at Wilyabrup in Margaret River. Planted in 1973, it is one of the region's oldest vineyards.
After cold soaking, the fruit is fermented with hand plunging three times a day. At dryness, after 18 days on skins, the wine is pressed. Malolactic fermentation and 18 months of maturation occurs in French oak barrels, 50% new.
Wine from this single block is bottled separately to other Juniper Estate Cabernets so its unique characters are not blended away.
Deep crimson, Juniper Estate The Tribute Cabernet Sauvignon is fine and silky in texture, yet with underlying depth and length. Cellaring potential is 10 years.
