Jericho Wines Adelaide Hills Fumé Blanc is made with Sauvignon Blanc grapes sourced from the cool climate, high altitude Kuitpo area of the southern Adelaide Hills.
The slow ripening conditions and shallow, well drained soils provide full concentration of flavours in the fruit as well as a mineral acidity, which is crucial for this style.
The wine is inspired by the wines of Pouilly-Fumé in France. The juice is fermented in seasoned French oak barrels and aged on lees to develop complexity and texture.
Golden green, Jericho Wines Adelaide Hills Fumé Blanc has ripe tropical fruit and citrus notes, a crisp mineral acidity and subtle oak. Cellaring potential is two years.
