Blanc de Blancs

De Salis Wines Blanc de Blancs is made with Chardonnay from the Lofty Vineyard. It is a cool climate site on the northern slope of Mount Canobolas in the Orange region.
The wine spends three months in seasoned French oak barrels with stirring, then is racked to tank. To produce natural effervescence, it undergoes secondary fermentation in bottle. After 3-4 years on lees, the wine is disgorged and prepared for release.
Pale green, De Salis Wines Blanc de Blancs has citrus flavours underpinned by saline notes and fine talcy minerality. Cellaring potential is 10 years from disgorging.
