Clairault Margaret River Sauvignon Blanc Semillon

Clairault Margaret River Sauvignon Blanc Semillon is sourced from the Bridgeland, Ironstone and Clairault Vineyards in Margaret River. It is around 75% Sauvignon Blanc and 25% Semillon.

The components are harvested separately. Both varieties are cold pressed and the juice is left to settle. A yeast strain is specifically matched to the wine in order to enhance its natural varietal characters.

A small portion of the grapes ferment in French oak barrels to provide texture and complexity. The remainder ferments in stainless steel tanks at low temperatures, preserving the fresh fruit flavours.

For one month prior to bottling, the wine matures on lees with gentle stirring.

Pale lemon, Clairault Margaret River Sauvignon Blanc Semillon has rich fruit flavours, subtle French oak and lively acidity, with a lengthy mineral finish. Cellaring potential is four years.
