Vasse Felix Filius Cabernet Sauvignon is named for the Latin term meaning 'son of'. It is the 'son' of the premier Vasse Felix Cabernet Sauvignon, carrying the classic Cabernet structure in an early drinking style.
The wine is primarily comprised of Cabernet Sauvignon, with small amounts of Malbec, Petit Verdot and sometimes Merlot. Each variety is vinified separately.
The fruit is destemmed but kept as whole berries for wild yeast fermentation. The Cabernet parcels are left on skins for 8-20 days, while the other varieties are pressed earlier to maintain a soft texture.
Each parcel spends 12-15 months ageing in French oak with limited racking to preserve the natural vineyard characters. The wine is then blended and bottled.
Ruby purple, Vasse Felix Filius Cabernet Sauvignon's fine, dusty tannins frame lingering dark berry flavours. The finish is long and fresh. Cellaring potential is six years.
