Tahbilk Riesling is sourced from estate vines at Nagambie Lakes, central Victoria. With plantings dating back to 1957, Tahbilk's experience with Riesling is second only to their experience with Marsanne.
The fruit is crushed and chilled. The juice is separated from the skins, then pumped into refrigerated stainless steel tanks to ferment with cultured yeasts. Strict temperature control maximizes flavour and freshness.
After 10-15 days, once fermentation is complete, the wine is stabilized, filtered and blended for bottling.
Pale yellow, Tahbilk Riesling has lively, fresh citrus flavours and a taut acidity while young, developing toasty complexity with age. Cellaring potential is eight years.
