Wild Fumé Blanc

De Salis Wines Wild Fumé Blanc is made with Sauvignon Blanc grapes grown high on the slopes of Mount Canobolas. They are harvested at good skin and seed ripeness.
The fruit is whole bunch pressed and the juice begins fermentation with indigenous yeasts in tank. After 24 hours, the ferment is transferred to predominantly seasoned French oak barrels, where the lees are stirred weekly for nine months.
A soft yellow hue, De Salis Wines Wild Fumé Blanc is complex yet bone dry in style with fine chalky texture and a mineral acid finish. Cellaring potential is four years.
